Recipe for good coffee in a French Press

I bought a Bodum Chambord coffee press a few weeks back and I’ve been struggling to make coffee that actually has a body to it without being too bitter and strong.  Today I think I might have hit it just right.  Here’s what I did:

2 flat tablespoons of coarse ground coffee (I used Gimme! Leftist)
12 oz filtered water, heated to a boil

Place grounds in dry French Press.  Pour in water right off the boil.  Stir with wooden spoon briefly to get the grounds mixed up throughout the water.  Place lid on press but leave the plunger up.  Start timer for approximately 4 minutes (maybe closer to 4.5). Press plunger very slowly and pour.

It’s pretty strong, but not disgustingly so.  Very enjoyable and rejuvenating. :)

If anybody has good tips for making coffee I would love to hear them, because I’m still learning.  I’ll try this again tomorrow morning to make sure it wasn’t just a fluke.
